I am always trying to think of quick healthy things to eat so thanks for sharing.
Cook veggies into purees and sneak into sauces like pasta sauce.  Make cauliflower super soft and sneak into mashed potatoes.  I also cook carrot, beets and some other veggies and freeze into ice trays and sneak a cube once in a while into the blender with their breakfast fruit and yogurt smoothies. I also put a dropper of liquid vitamin into their smoothies. I chop shiitake mushrooms really super small into meatloaf and add in a little ground flaxseed and some wheat germ and no one ever notices.  My 13 yr old thinks I make the BEST meatloaf!  Also mix ground turkey with ground beef for almost everything for lower fat, for me.
I always make sure I have 2 kinds of veggies.
