I've been a Crock Pot-aholic lately! Borderline obsessed. Love how easy it is. After a long day the last thing I want to do around 5 is start making a dinner. SOOO here comes my BFF to the rescue! I've found some good recipes I plan to share. But also have found some real duds. Sometimes the crock pot meals lack... Taste? So ladies. Please share! Anyone have any good HEALTHY recipes they can share?

I am definitly going to try this one out!! I'm obessed with my crock-pot!! And love healthy recipies. I have a cookbook with different recepies, but I find myself substatuting a lot.
All my crock pot meals taste the same. I think there's something wrong with my crock pot 'cause it always semi-burns, even on the lowest setting, and always has since the first time I used it. It leaves everything tasting like toasted crotch pot. Hehe!
Salsa Chicken!!

But we do this:
Ingredients

4 boneless, skinless chicken breasts
1 cup tomato-ey salsa
taco seasonings: chili powder, paprika, onion powder, cayenne pepper
1 can organic cream of chicken soup
1/2 cup reduced fat sour cream

Directions

Add chicken to slow cooker.
Sprinkle taco seasoning over chicken.
Pour salsa and soup over chicken.
Cook on low for 6 to 8 hours.
Remove from heat and stir in sour cream.

I come home on my lunch break and make it, and dinner is ready when we all get home at 5:30 - and the house smells great. I serve with taco chips crunched on top and a green veggie on the side. Sometimes over whole wheat angel hair pasta.
This looks really good! May have to try it this weekend. And thanks for the link to spark as well - I am always looking for new healthy recipes.
Okay, so I found this site called 5dollardinners, and love it. I just tried this recipe, and loved it!! She even breaks down the cost to make this meal!!!

Ingredients

1.8 lb beef roast ($4.03) Manager’s Special! $2.02 for this meal
1 tsp garlic powder ($.05)
Salt/Pepper
3 sweet potatoes, peeled and quartered ($1.49)
1/2 tsp ground ginger ($.05)
1 tsp cinnamon ($.05)
Salt
1 bag fresh spinach ($1.38) Rolled back this week!
Salt/Pepper

Directions

1. Place 1/2 - 1 cup of water into crockpot. (I like to add water to the crockpot. I can then use the stock after the roast has cooked for the base of the stew this weekend. Or you could make a gravy too!) Place roast in center of crockpot. Sprinkle with garlic powder, salt and pepper.
2. Peel and quarter sweet potatoes. Place in crockpot around and on top of roast. Sprinkle ground ginger, cinnamon and salt over the sweet potatoes.
