Chicken Potato and Dill Lentil Stew

This cool autumn weather has had me craving hearty soups and stews lately-you name the soup or stew and I've been craving it (or is it a pregnancy thing?!).  To prove that fact, in the last 4 days I've made chicken soup, pesto broccoli minestrone (recipe to come!) and this hearty one-pot wonder. This is a variation of one of my staple recipes, "Indian-Spiced Lentil…See More

Nutella Swirl Pumpkin Muffins

What better way to welcome autumn than with some scrumptious pumpkin, Nutella (need I say more?!) muffins! This "toddler-friendly" recipe is a variation of my baby-friendly "Pumpkin Spice Muffin Bites."  It's a little more indulgent but still relatively healthy as I substituted the butter with coconut oil (yes, it IS healthy in small doses...not convinced? Coconut Cinnamon French Toast with Caramelized Banana Maple Syrup

On Sunday morning, while munching on a "carob coconut puffed rice bar" and sipping my usual decaf Earl Grey, I saw a "Cinnamon Toast Crunch" commercial, which had me start reminiscing about my "breakfasts of the past."Long gone are the days when I used to devour sugary cereals like Cinnamon Toast Crunch, Cocoa Puffs (my favourite!) and Lucky…See More

Chicken Avocado and Cheddar Sammie

Who would have thought that a few simple ingredients and inspiration for my sons' dinner would end up turning into a new family favourite?Little did I know that some defrosted chicken, the borderline overripe avocados sitting in the fruit basket, and the two lonely slices of cheddar cheese in the fridge would amount to such a tasty and satisying meal for the family.1 tsp light mayo1/2 tsp honey dijon mustard1/2 mashed avocado (I doubled the amount to also make enough for my husband's…See More

Eggplant Parmesan Pasta

When I went into the kitchen this morning to prepare my son's snack I found lunch already prepared on the stove-sauteed eggplant and fresh tomatoes...It reminded me of a recipe that I used to cook often while living in Italy (note to self: I need to prepare this more often at home!).  I gave this pasta its name because it's basically eggplant parm in a bowl (minus the breadcrumbs!).Here's what you need:(Makes 2 portions-about 1 1/2 cups) 3/4 cup bow-tie pasta (or pasta of your choice) 1/2 piece…See More

Coocoo for Coconut Oil

I discovered coconut oil a few years ago now but have been limiting my use of it mainly in baking recipes.  The main reason for this is because at the time I started using it there was quite a debate regarding whether or not it was the healthiest choice out there...Fast forward to the present, when all of the sudden, skeptics and nutritionalists have finally "discovered" that it is good for you...VERY good for you!Not too long ago I forwarded a tweet to my mom called "160 Uses for Coconut Oil"…See More

Chicken Couscous with Roasted Red Pepper Dip

This is one of my faves to cook for both baby and I! I cook extra chicken so I can add it to a salad the next day. You can cook the chicken any way you want...steam it, boil it, sautee it or even BBQ it.Chicken breasts (however many you want to cook!)1 tbs. extra-virgin olive oil (or cooking spray) plus extra for drizzlingPre-made roasted red pepper dipfresh basil (to…See More

Broccoli Pistachio Pesto

Today I was in the mood for pesto, but I didn't feel like running off to the grocery store to pick up basil and pine nuts. Instead, I improvised with ingredients I already had in the house-pre-steamed broccoli and pistachios. I often substitute pine nuts with walnuts in my pesto because frankly, pine nuts are quite expensive and because you really can't taste that much of a difference. I had neither in the freezer so I opted for the pistachios and the final result was delicious!! (Of course my…See More
