Unique Pumpkin Recipes

Right when it hits the Fall Season, my family and I immediately start craving pumpkin flavored things. If it has pumpkin in it, we'll try it. This particular season, we really indulged. You'd think that we were on the cusp of a pumpkin drought apocalypse the way we've been consuming pumpkin these past few weeks. LOL! There are so many options and variations out there from sweet to savory. I prefer the sweet variety though. I'd like to share some of my more unique finds--awesome recipes I've…

The Fluffiest Macaroni and Cheese on Earth (Crock Pot Recipe!)

This is my absolute favorite macaroni and cheese ever! If you follow me on Twitter you already know that I was pretty upset about 2 weeks ago that I got everything I needed to make it but I forgot to buy macaroni noodles! Well, when my parents came to visit us, I knew we would be barbecuing so I was like “YES! THIS MACARONI WILL BE A PERFECT SIDE!”…

Irish Inspired Whole-Wheat Potato Cakes

The humble British potato. So versatile yet mostly steamed, boiled or mashed! Do you have left-over potato's that never get eaten? Have you got a bag of potatoes sat in the pantry? This Irish inspired recipe also eaten in Scotland (usually served for breakfast) got me making some simple, quick potato cakes. Low in butter and using whole-wheat flour, they are perfect for a healthy lunch…

From Granny's Kitchen - Spelt and Potato Bread

At Granny's everything happens in the kitchen.  There's a lot of cooking, a lot of putting the world to rights and a lot of joy.  Granny has been kind enough to share with me one of her bread recipes.  Granny bakes her own bread these days, as she has a wheat free diet.  There is nothing more nurturing than a fresh loaf emerging from the oven.  Knocks the socks of the alternatives in the shops I can tell you!…

Super Easy Granola Bars

It was a few days ago, that I promised a recipe for super easy granola bars, and boy do I mean easy! I bought all of the ingredients about a month ago, and for some reason kept putting of making them. Once I finally did get them made, I knew that it would definitely be a recipe that I would use again, with just a little bit of tweaking from the original one that I used. This post will include both recipes, the one I have already made and the one that I will make tomorrow or the next…

Ode To My Crock Pot

Oh crock pot, how I love thee. Let me count the ways...

  1. You cook delicious meals without much help from me.
  2. Your meat is so tender.
  3. Your time saver techniques are a life saver.
  4. Your meals are healthy, hearty, and on-time.
  5. You are the original set it and forget it.

Okay, I'm not drunk and I don't do drugs. I just wanted to tell you how great a crock pot is, especially for a working mom. We're able to make sure our family has a home…

Rainy Day: Mac and Cheese With Spinach Is My Comfort Food

Today its rainy, and honestly I’m over the rain. Lately it’s been raining here more than it’s been sunny. I’ve almost forgotten what the sun looks like.  Some days I believe I moved to the Pacific Northwest and maybe, just maybe, Edward will come running down my street. I kid. But, some days, a nice warm mac and cheese makes up for the cold I can’t seem to shake off no matter how warm I keep the house.

A Modification Of My Husband’s Girlfriend’s Recipe

Some days it’s more important to let the laundry go undone, the floors un-mopped and the dishes left in the sink. Today was one of those days and, since the weather was simply glorious, I opted to take the girls for a walk to the store and push back making dinner. In all honesty, we really did not need anything, but the dog and Baby Girl #1 both wanted a walk. So instead of starting a nice dinner, I defrosted shrimp while we walked to the store as the sun set. Once home, I made dinner in…
