I opened Lidia Bastianich’s “Mastering the Art of Italian Cooking” (which is the most incredible Italian cookbook I’ve ever owned), and I was ready to prepare one of her chicken dishes. Instead, a few of her recipes inspired me to try something of my own with a few of the ingredients I have in my fridge. The result…Continue

I frequently find it difficult to come up with dinner ideas. I get so bored having the same meals over and over. Brandon doesn’t very often have input on dinner, so he is of very little help. To my surprise he came to me the other day and said….
Brandon: Hey mom, I really wished we could have those noodles we had in Colorado with Dad at that one…Continue

This was exciting! I won the FAGOR Electric Multicooker a few months ago and couldn't wait to try it. I cook chicken breasts weekly and was tired of the normal curry, stew or BBQ, I wanted something American! The finished product turned out really good, but I did have to make a few tweaks to suit…Continue

Let me preface this recipe that I did NOT make this a CLEAN version. I waited too long to hit up the healthy food store in the next town over so I did the best that I could do with what I could find on a Sunday…

One of the challenges I have faced in my journey to be green, healthy and fit is in the area of cooking. If you have read my posts before, you know about my aversion to cooking. It’s one of those necessary evils I suppose, even though I am what you might call “kitchen challenged”. Don’t like cooking or baking, but I can clean like a champ!
My husband is, quite fortunately for me, the kind of guy who will eat pretty much whatever I put in front of him. Even if he doesn’t like it so…Continue

I put together this crockpot on a cold, snowy day. I knew by lunch-time that the last thing I wanted to do was stand in the kitchen cooking dinner come 5pm so this was perfect! I put all of the ingredients in the crockpot, stirred and turned it on high for 4 hours.
Though I couldn’t taste anything (thank…Continue

I put this crock-pot together on Sunday when the boys were recovering from the flu. Yes, I already know what you’re thinking… Mexican food? With the flu? Crazy, right? Well, they pretty much spent Friday and Saturday on the couch, eating nothing but toast with jelly,…Continue

I threw this crock-pot together last minute after pre-school and it turned out great! Though the colors in the picture are kind of ‘boring’… the flavor of this dish are NOT! Our boys loved it; and it was even more delicious over Creamy Parmesan Rice! I also steamed their fav veggie- edamame! Wonder why the love edamame? ; ) Its playful and kid friendly – so fun to ‘pop’! Lastly, I didn’t want to take the time to brown the chicken like the directions say, so I literally threw every last…Continue

I pulled this out of Rocco’s book-bag this week. When I asked where Mary was, his response was, “Mary went out shopping.” And Roman said, “Yeah! Mawy’s buying Chwistmas presents!”
I mean, at least they knew where she was, right?
I happened to do more Christmas shopping of my own this…Continue

I considered myself to be a pretty groovy mom – “up” on all of the hip trends and far out crazes of today’s culture. I can boogie with the best of them and have never passed up a trip to Funky Town. But the other day I ran across a tidbit in the news that had me questioning my conventional coolness MORE

When exactly did this happen? I know I’ve technically been a “mother” for 12 years, but when did I actually become a mother, like my mom and my grandmother? I don’t feel like a mother exactly, except when I have a five year old throwing a two-hour temper tantrum, but then I just feel like a crazy lady who needs to be locked up in the loony bin.
I love my daughters, and occasionally I even enjoy them. The older Elliott gets, the more fun I have with her. We talk clothes,…Continue
