I love to host dinner parties, but I really don’t like doing all the work. My husband is this huge foodie. I make a gourmet meal almost every day. To be honest, I like to eat well, and he does do his fair share of the cooking, but after a while, I’m over it! (Especially when he NEVER does the dishes, even when he cooks.) So over my many years of entertaining…
I have come up with a few tips and tricks to pull off an outstanding spread, while making my guests…

At the beginning of every month, I plan out all the meals that we are going to eat. For the whole month. I do this for a few reasons (meal planning, to ensure we aren't getting repetitive with our dinners, and to allow myself a few nights off from cooking each week). And I am painfully aware that as I plan out the meals there will be a number of dinners my son will not want to eat. Chicken tikka masala? No way. Pulled pork sandwiches? Not…Continue

I began using My Fitness Pal last year when I started to exercise more - running, weightlifting and the such. It began as a way to monitor mostly my carb intake but U used it to keep track of all of the food I was eating, water I was drinking, as well as monitor my calorie intake and compare it to the approximate number of calories I was burning throughout the day. You…

For once, our freezer is stocked. I still feel like it's not enough, but I have no room for anymore stuff, so I guess it will have to do! I've been making a few extra meals each week for the last few weeks to stock up on meals for when the baby comes. I've learned that anytime I make a casserole, to just make two of them and freeze the other one. It really doesn't take anymore time and saves me from cooking a meal on another day. It's so handy that I will continue to do it from now on to…Continue

At one point of my childhood, I stopped eating meat. It was a phase and didn't last too long, and my Mother just dealt with it by giving me lots of veggies. (Sorry, Mom!) When she tells this story today, she remarks that it was good timing because my brother was going through a phase of not eating vegetables and everything evened out.…Continue

Throughout the entire month of October, Eamon had been "collecting" pumpkins and lining them up in sweet little spots throughout the house, occasionally trying to roll the largest one through the rest in an effort to reenact Linus and Lucy picking their carving pumpkin at the beginning of "The Great Pumpkin" Charlie Brown special. There were large ones, small ones, white ones,…

"... and a little child shall lead the way."
One day, the kids and I were running errands when we came to a stop light where a hungry and homeless man was standing and asking for change. Normally, I'd grab some coins to give, but didn't have anything in our usual spot. I started fumbling around to find more change when he decided to move on down the line of cars. Before I could catch…Continue

I was on the hunt this weekend for a spinach soup that was hearty but not creamy and not full of noodles or other grain. We have been trying to cut back on the grain intake again and I had already had my share of creamy soups during the week (lots of pumpkin and creamy potato leek). Plus, we had purchased a big bag of spinach at the market last Sunday and it…
When was the last time you had a nice piece of cake? Was it at a celebration? Or maybe it was after a nice dinner out with family or friends? Whatever the event, you probably remember it really well, because it turns out that eating sweets is linked to episodic memories.…Continue

ABC's hit television series "Once Upon a Time" is returning tonight! Tell me in the comments who is ready for Season 5. My biggest excitement this season is Emma Swan and her new role as "The Dark One". Will she be able to fight the forces of evil that have always seemed to reside in her? I'm sure we will soon find out just how bad Emma can (or cannot) be.
To celebrate tonight's season five premiere, I have created a "Once Upon a Time"…Continue

Yes, lots and lots of pumpkin used in things you would expect (coffee…Continue
