Asian Noodle Salad is a great, healthy, light weight salad perfect for dinner as a side dish or to stand alone. I first tried a very similar version to this dish at my healthy cooking group meeting, but I made a few modifications to the original recipe.…

We love smoothies. And with all the smoothies we’ve made, I’ve never gotten the nerve to add dark leafy greens. And I know they must taste good, ’cause they wouldn’t sell them at smoothie stores otherwise.
So in celebration of Earth Day, and because the beautiful green chard in the frig is getting limp by the hour, I finally committed to a first attempt.
Red Chard-fruit smoothie. Would the family be willing to drink it? Packed full of chlorophyll, folic acid, vitamins A, C, K,… Continue

I am sure you have all noticed that my recipes are mostly light and healthy. I tend to eat that way in the summer as I live in sunny southern California and am in a bathing suit every weekend. It sucks to be me, I know.
This fall however, you will see a dramatic difference in my recipes. I am from Indiana. Comfort food is my middle name and I can only be parted from it for so long. As the leaves change, look for my recipes to become… Continue

I put together a new recipe last night and it was DELICIOUS. The best part is that it's simple to make and tastes like you spent hours. I served the sea bass with grilled asparagus and small grain brown rice.
Soak one bunch of asparagus in water for at least an hour. Drain and coat lightly with olive oil and salt. Grill on high for three minutes.
Short Grain Brown Rice
Combine two… Continue

If you love stuffed baked potatos with bacon and cheese on it, you’ll love this one.This salad is great chilled for a barbeque or while still warm as a side dish.
Not the healthiest thing in the world, especially since I use more of the artery clogging ingredients, but it really is awesome!

Adobo pork chops are a big favorite at my house. They are spicy and have a wonderful flavor. I usually make the marinade the night before or first thing in the morning and let them soak up the flavor overnight or for at least 8 hours. The chops are very low in carbs so I usually serve them with beans or potatoes.
Makes: 6 servings
* 6 boneless pork top loin chops, cut 3/4 inch thick ( 1-1/2 to 1-3/4 pounds total)
* 2 tablespoons packed brown… Continue
