Chicken Avocado and Cheddar Sammie

Who would have thought that a few simple ingredients and inspiration for my sons' dinner would end up turning into a new family favourite?

July is Sandwich Generation Month, a chance to pay tribute to adult children who are juggling the demands of raising kids while taking care of aging parents.
