Thankful Thursday

Working towards my goal....

I have 8 weeks to go before I hit the beach and I must admit that even thought I haven't entirely reached my goal, I am still very pleased with my progress. I am eating better and working out harder than I ever have. I know that with this combination that by the time I turn 35, just 9 weeks away, that I will have reached my goal....to be in the best shape of my adult life. I will always have room for improvement though because I don't want my journey to end with a trip or when I have a birthday… Continue

Eating Healthy

For many of us, finding something to eat that is good and healthy can be a challenge. One of the things that I love most about summer is using my grill and finding different spices or herbs to use on the meats and vegetables that I cook. Softball is here!

School is coming to a end for my girls and with that, comes girls softball. They have a great time playing it and I enjoy watching them. This activity is fun and helps keep them active and entertained through most of their summer vacation. The downfall of it, is that their games are typically a few times a week and right after I get off from work. This means that I have a limited amount of time to prepare and cook dinner for my family. Yummy Mexican Lasagna

Mexican Lasagna



1Lb lean gr. beef or turkey

1 can refried beans (nonfat)

2 tsp oregano

1 tsp cumin

3/4 tsp garlic powder

uncooked lasagna noodles (whole wheat)

26 oz Thick and Chunky salsa (or approx 2 1/2 C.)

1 3/4 c. water



1 c cheese (weight watchers shredded Mexican or Kraft 2% is good)
