School lunch for your little boy or girl shouldn’t be drab. They should be excited by the bell, eager to whip out their lovingly made, nutritious and delicious lunch anticipating that it will be the envy of the whole class room.
Of course, that’s easier said than done, and when time is at an absolute premium no one could blame you for throwing together a jam sandwich and a packet of crisps. So, I’ve thrown together a list of my favourite, easy lunches for you to whip up in a snap – and keep your little ones enthusiastic about their healthy meals! If you have access to some collapsible containers, you can even make some of these lunches on the weekend and keep them throughout the week without having to worry about space, genius!
So, without further ado – here are my tried and tested classics:
The night before school, prep this delicious meal by cooking pasta and bacon, and mixing with spinach, tomatoes crème fraiche and mustard. Et Voila!
Make a dressing by mixing oil, soured cream and vinegar.
Take 75g of cooked bbq chicken, put this in a lunchbox (or a perfect time to make use of your Collapsible containers). Mix with lettuce, sweetcorn and tomatoes. Take the juice of one lime, and some peeled and chopped avocado – add this to the mixture.
Pack the dressing separately to the container, scatter the taco over the salad when you serve.
Cut sweet potatoes into fry shaped wedges, add olive oil and salt. Roast in the oven on a baking tray for 25 minutes at 450 degrees F.
Take ground turkey breast, mix with garlic, cilantro, chili powder and a little salt. Form these into 4 patties. Grill until they’re cooked through, rotating as applicable.
Mash some avocado with lime juice – you can use thins instead of baps but make sure they’re whole grain. To serve, top with avocado, tomato, cucumber and lettuce.
