I remember the good ol’ days when my husband used to make me breakfast in bed. In fact, as Valentine’s Day approaches I asked him about the amazing puffed pancake he used to make for me way back when. It took a bit of prompting (obviously it has been way too long) but he finally remembered and started the search for the lost recipe. Torn from the pages of a 1992 Select Homes magazine, we finally found it! Here it is…
BERRY BREAKFAST PUFF (for two)
½ cup flour
½ cup milk
2 Tbsp sugar
1 tsp vanilla
icing sugar, yogurt or whipped cream and your favorite berries (fresh or frozen)
In a bowl whisk eggs with flour and gradually whisk in milk.
Add sugar and vanilla. Pour into greased 8 inch oven-proof skillet.
Bake at 425 degrees for 15 minutes.
Add your favorite toppings and serve immediately.
This recipe is meant to be shared, so get your kids off to school, take the morning off, climb back in bed and share breakfast in bed together. Among other possibilities.
