Do you ever have one of those days? You know the one; you wake up late, rush around to get everyone ready for school, forget to eat breakfast yourself, get everyone strapped into their car seats, go back in to the house to grab the keys….. only they’re nowhere to be found. So, trying not to panic you start slowly looking around the
house in all the hiding spots that come to mind. When no keys turn up and you’re now officially going to be late to school drop off, you begin to get a little more frantic. You start running around the house, looking in the same places three or four more times, hoping you just weren’t paying attention the first time, breaking a fingernail and
stubbing your toe along the way. You never do find the the keys and you end up getting your kids out of the car, heading back into the house, and declaring that some days deserve a do over.
That was my day today. And no, I still haven’t found the keys, so if anyone has any other ideas for where to look, I’m all ears. The upside to being trapped at home, is the ability to cook up a tasty dessert. And that’s exactly what we did. Foodbuzz is currently having a competition to see who can make the best dish using Nature’s Pride bread. The winners receive a paid trip to San Francisco to show off their creation at the Food Buzz festival. Now that’s my kind of prize!
When thinking about what I could put together using bread, the first thing that came to mind was a dessert. It’s apple season and, for me, nothing goes better with apples than caramel. Pair it with some bread and a cream sauce and you’ve got one killer dessert for the masses. I can say that this dish would be tasty with a scoop of ice cream as well, but seeing as it’s fall now, I figured the brandy cream sauce would warm the palate a bit better than a cold scoop of ice cream. Now that I’ve sufficiently gotten your mouth watering, let’s get started!
6 Slices of Nature’s Pride Bread (Oatmeal or Honey Wheat)
6 Tbsp of Unsalted Butter
3/4 Cup of Brown Sugar
1/4 Cup of Maple Syrup
3-4 Shakes of Salt
1 tsp of Vanilla
3 Large Apples, Peeled and Thinly Sliced
2 tsp of Cinnamon
1 tsp of Nutmeg
Grab a 9×13 pan and line it with your bread. Take any extra and stuff it into the corners and edges so your entire bottom is covered.
Now, in a small saute pan, add in your butter, brown sugar, syrup, vanilla, and salt. Turn the heat up to medium and let it cook until all the ingredients melt together.
Lay the apples over the top of the bread and pour the caramel over the top. Finally sprinkle the cinnamon and nutmeg over the apples.
Place your assembled dish into an oven preheated to 350 degrees for 25 minutes. And here’s where we’re at after cooking it up.
Last up, the brandy cream sauce. Here’s what you’ll need:
1 Cup of Whipping Cream
1/2 Cup of Brown Sugar
2 Tbsp of Brandy
1 tsp of Vanilla
Add all the ingredients into your pot. Turn the heat up to medium and cook it until the sugar is completely dissolved. Remove from heat and allow to cool.
Serve up a few spoonfuls of the cream sauce along with your bread bake and prepare to reclaim your day. I can honestly say that eating a plate of this dessert is almost better than finding your lost keys.
