oy watching all the crazy ingredients that went into something that ultimately tasted like a treat.
Today’s recipe is a riff on one of the smoothies I often make for myself and the boy. I’ve mentioned before that both frozen banana and avocado are healthy smoothie additions that serve a dual purpose: they add the perfect, creamy texture. I often throw 1/2 an avocado into a fruit-based smoothie and the girl is none the wiser for it! Even the taste of banana does not really come through when you are using other ingredients, and both yield a nicer texture than ice.
They key to this recipe is to have a really ripe avocado that will puree easily in your blender. The grocery gods were not looking out for me this weekend, so mine was a little bit too hard. As such just added a few more tbs. of milk to help everything get smooth.
I included both a tbs. of raw almond butter and Amazing Grass Kidz Chocolate Superfood powder**, both of which could easily be omitted.
Chocolate Breakfast Pudding
1 ripe avocado
2-3 tbs. milk of choice (I used unsweetened vanilla almond milk)
dash of cinnamon and salt
1 tsp. vanilla
1 tbs. almond butter (optional)
1 scoop chocolate protein powder (optional)
4 tbs. cocoa powder
Combine all ingredients in blender and process until smooth.
**I don’t like to use the Amazing Grass every day as though organic it’s still soy-based. Another good way to add extra nutrition to your kids’ smoothies and a dish like this is hemp powders like Nutiva Organic products, which are free of most common allergens. Hemp is a great source of amino acids, omega3 and omega-6 fatty acids, and is an easily digestible source or protein.
