I pulled this out of Rocco’s book-bag this week.  When I asked where Mary was, his response was, “Mary went out shopping.” And Roman said, “Yeah! Mawy’s buying Chwistmas presents!”

I mean, at least they knew where she was, right?

I happened to do more Christmas shopping of my own this week!  (Maybe that’s where the ‘Mary’ idea came from)  One place that was stocked with goods was my favorite; TJMaxx.  When I left the store, it was official… I am DONE Christmas shopping!

I stopped at home before picking up the kids, hid the last of the Christmas presents and threw this crock-pot meal together in minutes.  I didn’t have a recipe but I used ingredients that you can’t go wrong with and it turned out great!  My family really enjoyed this meal which definitely told me that it was worthy of a blog post!

Creamy Crock-pot Chicken

Ingredients

4 boneless, skinless Chicken Breasts

1 can Light Cream of Mushroom Soup

2 Tbsp. Butter

1/2 cup 2% Milk

1 Packet of Dry ‘Good Seasoning’ Italian Dressing Mix

Pepper (do not add additional salt)

1 small Package Sliced Mushrooms

Egg Noodles, Mafalda Pasta or Rice Pilaf- Your Choice! (I used Mafalda Pasta Noodles)

Directions

Season each piece of chicken with a dash of pepper and place at the bottom of your crock-pot.

Sprinkle Good Seasoning Packet over chicken.

Place sliced mushrooms all around and on top of chicken.

In a separate bowl, Mix Mushroom Soup and milk together and then pour over chicken.

Drop little bits of butter over chicken.

Cover and Cook for 6 hours.

Serve over Egg Noodles, Pasta or Rice

Also, try mixing a steamed veggie of your choice in with the sauce; we enjoyed this dish with green beans!

:NOTES:

Try doubling the soup/milk amounts for a more ‘saucy’ dish!

Using Light Campbell’s Soup decreases calorie intake.

My photo does not show mushrooms because I did not have a package, however, next time I will definitely incorporate in the meal.

If adding green beans, cut in bite size pieces and toss the dish all together for little ones… they make the dish more colorful and appealing!
