OUR DAILY PINS

Our schedule has been insane this week and the only down-time we’ve had is nap-time.  The rest of the day; morning, afternoon and evening has been filled with pre-school, kids play-dates/Christmas parties, a company Christmas party and a few other night time events too!  Brian said to me last night,

How about a movie night and early bed-time on Friday?

I will never turn that down; sounds perfect!  I declined an invite to a Cookie Exchange Party because I just couldn’t handle 5 nights out in a row, so I’m putting together an In-House Date Night Dinner for Bri and I; Spaghetti with Clams, a simple salad and garlic bread!  I plan to make this homemade Caesar Salad Dressing because, well… Bri enjoys a good Caesar Salad and I love the simplicity of it!  Found on ‘Annie’s Simple Life’.

And as for the main course, I’m sharing a recipe today that was given to me by my best friends mom.  It has a delicious twist to it; diced tomatoes!  Like me, you might think, “Tomatoes? With Clam Sauce? Noooo…” but when I tried this dish for the first time, I was hooked and love it!  Its not the traditional ‘Linguini and Clam Sauce’ dish that I am used to while growing up but it’s one that is definitely in my Top 10 List of Good Pasta Dishes!

Spaghetti with Clams

Ingredients

2 Tbsp. EVOO

1 Yellow Onion, finely chopped

2 cloves Garlic, crushed (I used minced)

1 can (14 oz.) chopped tomatoes (I’ve also used 1, 14 oz. can and drained another 14 oz. can using only the tomatoes)

1/3 cup Dry White Wine

1 jar or can (5 oz.) Clams, drain and reserve juice

1 lb. Spaghetti

2 Tbsp. chopped Parsley

Salt & Fresh Cracked Pepper

Directions

Heat EVOO in large skillet.  Add onion and saute for 5 min. or so.

Stir in garlic, tomatoes, wine & reserved clam juice.  Salt to taste.

Add a generous grinding of black pepper.  Bring to boil, stirring, then lower heat.

Meanwhile, in large pot, boil noodles.

Cover pan & simmer gently for about 20 minutes, stirring occasionally.

Drain spaghetti; Add clams and chopped parsley to sauce and heat through, correct seasoning.

DO NOT BOIL CLAMS – they will get tough and chewy.  Add them at the last minute.

Toss to mix and garnish with a sprinkle of parsley and freshly grated cheese.

I can’t wait to sit by the fire and watch a movie this weekend!  Next time you have a free evening, try this meal for your in-house date night; I promise… it’s good!
