Homemade Outback Alice Spring Chicken

 So anyone who knows me, knows I am all about the most bang for my buck. I don't mind spending $$$ on good food, however, it has to be good. Chain restaurants often disappoint me, as they will successfully ruin even the simplest of entrees. Outback found a way to pulverize my Alice Spring Chicken, to a dry summer remnant of what it was supposed to be. It was so bad, I had to re-create the dish. So here it is>>

1 lb Fresh Chicken Breast:     $5.00
5 lb bag of White C Potatoes: $2.99
1 lb of Sliced Mushrooms :     $2.50
1 Sliced Red Pepper                $0.89
1 lb Fresh Green Beans          $2.50
1 Sliced White Onion
6 Slices of Bacon> Optional
1 Tub of Sour Cream                $1.99
3 Slices of Cheddar Cheese
Garlic Powder
Sea Salt
Olive Oil

Honey Mustard Sauce> Optional
Goulden's Spicy Mustard
Mix and taste until you get the flavor your looking for. Some like more sweet, some more mustard. You do the math. 

Meal Stats>  Cost : $15 , Time: 45 Min> Serves 4

GLUTEN FREE MEAL- Minus the Honey Mustard 

I'm not very good with details, and I dont measure so you will have to fill in the blanks some places.

  1. Preheat oven to 400 Degrees


  1. Season chicken with Garlic powder and a little bit of salt. Not much is needed unless you are not going to use the bacon.


  1. Place Chicken in pan first, then all sliced veggies on top. You can use whatever you want, you don't have to play by the rules.


  1. Now place the bacon on top of veggies, and cover with another pan before placing in the oven.


  1. *Mean while White potatoes can be cooked in oven as well, and may need more than 45 min depending on size.


  1. Take Chicken out after 30 Min and apply cheese slices, and let cook for 15 additional min in the oven without cover.


  1. You should cook your green beans at this point.
  2. Steam for 5 min with Coarse Sea Salt, Pepper and Olive Oil.

I love oven meals because after prep, your hands are virtually free besides a few extras. Great mid week meal, ENJOY!!!
