It is nap time, and I just threw together these easy oatmeal cookies. I freeze a batch, so we can eat them during the week one at a time. These are very low in sugar, and I add flaxseed meal which gives them a nutty flavor and adds a bit more nutrition. My picky eater will always eat a ton of these, and I don't feel so guilty giving them to him!
