If you’re like me, you have a serious obsession with anything that includes the word “pumpkin” in it. Especially at this time of year. So the other day I was sitting here giving my little guy a bottle and I realized: pumpkin cookies sounded like the most delicious thing to pair with my coffee EVER. And since they have pumpkin in them, I can justify them as being healthy. Right? Yep, thought so. And then began my quest for an amazing pumpkin cookie recipe. After my first batch of pumpkin bread this year turned out like crap, I’ve been much more careful with the pumpkin recipes I select – because rubbery baked goods = trash.

And then I came across a decent sounding pumpkin cookie recipe. Which I tweaked a little – and what came out where the most delicious accompanyment for my morning (all day?) coffee. Now, these cookies are super soft and almost like a mini slice of pumpkin bread goodness in your day.
