Year-round, local, organic strawberries are not in the cards for those of us living in Ohio. That's okay, we can freeze them.

Our CSA offered a u-pick last Sunday morning for all of their CSA members. Only $1 per pint. Our area grocer had organic strawberries for $6 per pint last week. Yes, it's easy math.

Don't forget to load up on the strawberries before they're gone for the season. Why? Because strawberries are a great source of Vitamin C and flavonoids, and only 45 calories per cup.

I clean the berries, lay them on a wax paper, lined baking sheet, and put them in the freezer for a hour or 2. I then move them to a plastic bag. I hate that I use plastic bags and would really like to stop. I guess I could move them to a glass container? What do you freeze in?

BTW, we have a new air conditioning compressor, and it's the quietest thing I've ever experienced. While it was being installed my hubby found large cracks in our heater. Yes, we need a new heater. It's always something. Good news, our ice maker has been fixed! It's the little things in life that make me happy.
