I am returning to my blog posts about the health benefits of vegetables.
And what better vegetable to start off with than with bell peppers.
There is nothing more yummy that a fresh, ripe bell pepper. They are the perfect combination of tangy and sweet and you don't even need to dip them in anything. They are perfect just as they are. Wash, slice, clean out the seeds, and enjoy.
And while you enjoy their crisp, tangy-sweet flavor, you can rest assured knowing you are doing your body loads of good!
They are loaded off the charts with vitamins C and A. They are also a great source of B vitamins (several) and antioxidants (that, by know, we all know help to prevent cancer). Red bell peppers have greater quantities of health benefits than green, and also are a good source of lycopene - which helps to prevent cancer and heart disease.
Bell peppers help to prevent
Cataracts and eye disease
Heart disease
Blood clot formation
Strokes
Rheumatoid arthritis
Various forms of cancer
They are a good source of folic acid - so they are a great food for expecting mothers.
They are also a low-cal food. So eat away!
