As this was the thing I was thankful for yesterday, thought I’d share my favourite recipe for it today!

What you’ll need:

bubble tea tapioca (available at asian grocers)

2 cups water

3/4 cup brown sugar

3/4 cup white sugar

1 cup strong tea

2 teaspoons honey

1/3 cup milk

What you do with the stuff:

1-  Boil the tapioca over medium heat for 20 minutes.  Turn off heat and let sit for 25 minutes.  Drain and rinse with cold water.

2-  Combine sugars and water in a separate pan.  Bring to a boil and let sugar dissolve.  Remove from heat.  Place tapioca in the syrup and let refrigerate for at least 1 hour.

3-  Make a strong cup of tea.  Dissolve honey in the tea.  Place in refrigerator to cool.

4-  Place 2-4 Tablespoons of tapioca in bottom of a tall glass.  Pour over cooled tea.  Fill with ice.  Add milk to fill to top of glass.  Stir well.  Insert wide straw or use spoon to scoop up tapioca.  Enjoy!
