Yesterday was a long day, so I am going to pretend that today is the start of the week. I did have a successful start to the Spring Bootie Buster(Fitness Friday) so that is good. Today I get to spend the day substituting in Kindergarten and will come home for a much needed run (need a little stress relief but was up too late last night to get up early to do it)

It's time for Tasty Tuesday


Here are some recipes I have tried and liked this week:

Breakfast recipes

Banana Breakfast Cookies


Ingredients

  • 2 bananas
  • 1/4 coconut oil, liquid
  • 2 tablespoons peanut butter (I used almond butter)
  • 1/4 sugar (I used 2 tablespoons of Truvia)
  • 1 egg
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 tablespoon ground flax
  • 1 cup flour (I used whole wheat flour)
  • 1 1/2 cup oats (I used Quaker whole grain old fashioned oats)
  • 1/4 cup chocolate chips (I used dark chocolate mini chunks)


Directions

Preheat oven to 350 degrees. Line a cookie sheet with parchment paper

Mix bananas, coconut oil, and peanut butter with a hand or stand mixer until combined. Mix in sugar, egg, baking soda, vanilla and flax. Mix in flour and oats and blend until just combined. Stir in chocolate chips

Scoop 1/4 cupfuls onto you baking sheet. Flatten slightly with the palm of your hand (they will not flatten themselves while baking) Bake for 10 minutes or until they start to get golden brown. Cool before removing from cookie sheet

Best served warmed in the microwave. Keep some in the freezer for a fast morning breakfast. My recipe made 9 cookies

Dark Chocolate Almond Over Night Oats


Ingredients

  • 1/2 cup old fashioned oats
  • 1/2 cup + a little extra* Dark Chocolate Almond or Soy Milk (I use Almond Breeze)
  • 1 tbsp. chopped dark chocolate
  • 1 tbsp. chopped raw almonds


Instructions

  1. Mix all ingredients in a container that can be covered and sealed (I recommend a mason jar or tupperware).
  2. Let chill in refrigerator overnight.
  3. Oats should be softened by morning and ready to eat!
  4. Serves 1

Lunch recipes

Hummus English Muffin


1 whole wheat english muffin

2 tablespoons hummus

1/2 avocado sliced

1-2 slices of tomato

Toast english muffin and place it on your work surface. Spread hummus on both sides. Top one half with avocado and tomato slices. Put other half on top.

Peanut Butter-Strawberry Wrap

1 8 inch whole wheat tortilla

2 tablespoons natural unsalted peanut butter or almond butter

1/cup sliced strawberries

Lay tortilla on a work surface. Spread with peanut butter. Cover with strawberries. Roll into a tube

Nutrition info: 332 calories per serving, 10 g protein, 19 g fat, 2 g saturated fat, 230 mg sodium, 7 g fiber

Dinner Recipes

Skinny Chicken Fried Rice


Ingredients

  • 4 cups rice, prepared
  • 1/2 pound boneless, skinless chicken breasts, cooked and chopped into bite sized pieces
  • 1 cup peas & carrots, frozen
  • 1 small white onion, chopped
  • 2 cloves garlic, minced
  • 2 eggs
  • 3 tablespoons sesame oil (other oils work, but I highly recommend using sesame)
  • 1/4 cup lite soy sauce


Instructions

  1. Prepare rice according to package instructions to yield 4 cups cooked rice...This was 2 bags of rice for me.
  2. Heat sesame oil in a LARGE skillet on medium heat. Add onion, garlic, peas, and carrots and "fry" until the veggies are tender (onions will be close to clear)
  3. Crack eggs into skillet and scramble, mixing throughout vegetables.
  4. Add rice, chicken, and soy sauce to skillet. Mix REALLY well. This is why you want to use a BIG skillet.


Servings: 6 – Amount Per Serving (approx. 2 cups per serving): Calories: 385; Total Fat: 11g; Total Carbs: 53g; Dietary Fiber: 3g; Protein: 17g; Sugar: 1

Question of the day

I am feeling very lucky/blessed


I am feeling very lucky and blessed because I am surrounded with a loving and supportive group of family and friends. I feel lucky everyday for the life I live and for what God has given me, the good and the bad and there have been some tough times. But every night before I go to bed I thank God for all he has given to me, I truly appreciate it all.

I feel lucky to have such an amazing family and not just my immediate family but my extended family (which includes my husbands family) . I know that not everyone has a family like mine which is why I feel so blessed to have them. We enjoy being with each other and we see each other often. Not just on holiday's because we feel like we have too. My boys are great friends with their cousins which I think is awesome.

I am also blessed to have so many great and supportive friends. I am lucky to have made friends with people who encourage me in the things I choose. They challenge me in positive ways and we have lots of fun together.
