Mama’s I just embarked on a 7 hour road trip alone with my 4 little people…yes 7 whole hours. Don’t feel bad for me because it actually went really well. The day before I prepared them for the ride and their main concern was, “Mama, what are we gonna eat on the road?” So to ensure that Mama didn’t have a meltdown on the road I sat down and asked them what kinds of food they wanted because I made it real clear that we would only be stopping for bathroom breaks only. They knew that I was dead serious. The night before I prepared and bagged 4 of everything so it would be easy to access. Their food list went like this:

  • sliced apples
  • sliced pineapples
  • turkey sandwiches
  • peanut butter crackers
  • gummy snacks
  • Capri Sun juice drinks
  • bottled water
  • applesauce

You all know that Mama is trying to eat Paleo (no dairy, refined sugars, processed foods, beans or grains) 80% of the time. I started 10 days ago and so far I have been able to stick to it and lose some weight in the process. Now I will say that I was a bit worried about being able to do Paleo while being away from home for 9 days. I keep my house stocked with everything I need so I always have access to fresh veggies, fruits, meats and homemade treats. I decided that I was going to take some of my veggies with me because I didn’t want them to spoil while I was away. So here is what my cooler looked like:

  • head of cabbage
  • whole eggplant
  • whole butternut squash
  • 2 bunches of kale
  • pure maple syrup
  • coarse seal salt
  • coconut flour
  • 2 cans of wild Alaskan salmon

When I got into town to see my family I immediately went grocery shopping to their local health food store and then on to Publix. I spent about $45.00 on the following items:

  • almond meal/flour
  • almond butter
  • celery (2 bags)
  • spring mix salad
  • apples (2)
  • avocados (2)
  • strawberries
  • bananas
  • Lindt 70% Cacao bar

I sat down while my kids were playing with family members and planned every meal I would eat for the duration of my trip. I planned breakfast, snacks, lunch and dinner. I even took my cooler with me whenever we left the house because I wanted to be prepared in case I got hungry. I know some of you Mama’s are thinking that this sounds like too much work. I used to think the same thing too, but I’ve found that if you are serious about getting healthy and fit you have to have a plan and be prepared in order to be successful as with anything else in life. I am seeing that the things I struggle hardest with are snacks. So I give myself a lot of different options so that I’m not bored. These were my snack options:

  • strawberries
  • pineapples
  • homemade Paleo banana bread ( I baked it on day 2)
  • homemade chocolate heart shaped muffins
  • guacamole with celery or bacon spoons (recipe to follow)
  • cabbage
  • apples
  • spring salad
  • boiled eggs with spinach

So Mama’s you see I never get bored and when I want a bit more sweetness I get a piece of my 70% cacao dark chocolate bar and that cures my craving. Now here is the guacamole recipe I tried and it’s easy, simple and tasty.

2-3 avocados (sliced small)

½ sweet Vidalia onion (chopped small)

½ tomato seeded (sliced small)

Sea salt


1 lime

-          combine all of these in your blender or food processor and pulse until your desired texture

-          store in the refrigerator in an air tight container

See I told ya easy, peasy, lemon squeesy!

**Note: you can used celery sticks to dip into your dip or you can cook bacon until it’s crispy, drain and scoop your dip this way. If you choose the bacon option I would go with the thick variety so your bacon doesn’t snack into when you dip. Hope you enjoy Mama’s!
