Since most of us have had to tighten our budgets with the rising cost of "stuff"... Are you eating more spaghetti? Beans and rice? Five dollar pizza's?

Can you share a really good, budget friendly dish? TIA...

Tacos, sloppy joes, meatloaf, chicken and rice,
Everything I make is on budget. I can't afford to go out and buy fancy ingredients or lots of them. If you go to my food blog, you'll see that, not only are the cheap to make, most of them are fast too.

Actually I have always tried to be frugal when it comes to meals. We have "stock" stuff like pastas, canned foods, and regular stuff for most days: sheppards pie, casseroles, spagetti, stroganoff, and I use my crock pot.

But, sometimes we "splurge" - eat fahitas, lasagna, and steak.

I like to save a little money on meals, and still make sure they are healthy for my family so that I can afford fresh fruits, and veggies for snacks, etc.
I buy stuff when it is on sale & stock up. At the moment my budget friendly dishes revolve around steak salad, grilled steak & veggies with couscous and short rib ragu & polenta. This is because all through July & August london broil and beef short ribs were being marked way down at my 2 grocery stores as if they were competing to see who can sell the most. They were cheaper than ground beef!

I also make a lot of dishes with bone in chicken thighs which are almost a third of the cost of boneless chicken breasts and stay much moister in crock pot & long baked dishes
We love sale! And we stock up when there is one. We have a daily theme e.g. chicken on Mondays and tried to use everything we have in the freezer before we buy.
The best thing that has saved us money and also my sanity is planning a week in advance on what's for dinner.

My husband, who's in charge of cooking dinner, and I will sit down together and plan 7 kid friendly dinners that we want to eat too. Then we go grocery shopping together and buy the items on our list.

What was happening is because I own my own business and work 12-14 hours a day I'd wait until 4 p.m. and try to figure out what we were having for dinner and everything would be frozen so we'd just eat out. I was putting on the pounds. We were spending 50 bucks at a time and then we'd go home and still be hungry.

Now as soon as I rush the kids out the door I get out of the freezer whatever the kids decided would be for dinner and then it's ready to cook when it's time to prepare. It's really saved our household a ton of money.. and my waist line seems to like this too. :P
We buy those industrial-sized bags of rice, they're 20 lbs. We eat rice with everything. It's cheap, it's easy and it's filling. Then we buy big bags of frozen veggies and cheap meat (ground beef in the tubes, chicken drumsticks or thighs, etc.).
Fruity Prawn Salad

Ingredient :
One Canned of Mixed Cocktail Fruit
250g of Fresh Prawn
Coleslaw (I prefer Kraft Coleslaw)

Cook prawn, shell and halved it. Drain syrup off the canned cocktail fruit. Place cocktail fruit into a nice plate and lay the prawns nicely on the fruit. Chill them in the fridge till ready to serve.
Upon arrival of your hungry guests, squeeze coleslaw on the salad and serve them with pride. You may light a candle and place it on the salad, dance or march your way to the dinning table ;-)
There’s no secret to this recipe. Just Serve Cold.

If you do not like prawn, you may replace it with chicken or simply go without any meat.

If you have fruits or vegi that you cannot finish, keep it and use them with this recipe.

My Really Easy Shepherd's Pie is very inexpensive and fills up my whole family!

One pound ground beef-(whatever's on sale)
Salt, Garlic powder, onion powder
One envelope brown gravy mix
Water for making gravy
Frozen green peas (about a cup)
Frozen corn kernels (about a cup)
Instant roasted garlic mashed potatoes (or plain, or homemade)
Shredded cheddar cheese

Brown the ground beef in a skillet, dump it into a colander to drain, then put back in skillet.
While the ground beef is browning, microwave the peas and the corn until defrosted.
Sprinkle the ground beef with salt, garlic powder and onion powder to taste.
Make the gravy according to the directions and stir it into the ground beef, set aside.
Add the peas and corn to the beef, stir to combine, and pour it into an oven-proof casserole.
If you are using instant mashed potatoes, make them according to package directions.
Top the ground beef and veggies with the mashed potatoes, spreading gently over the top. Sprinkle the surface of the potatoes with the shredded cheddar.
Put it in the oven at 375 (your temperature may vary depending on your oven) until the cheese melts and the middle is warm.

I serve it with the rest of the corn and peas from the packages and canned biscuits or crescent rolls if I was able to buy them on sale that week. I hope that helps!

The kids love Elvis Sandwiches. Hubby & I love "Crab" Ceviche on tortillas. Seriously, that fake crab is like $2.99. We end up having leftovers for lunch too. Love leftovers :)
Right now Albertson's has chicken breast boneless for $1.97 lb. My husband and I went in and bought 20 lbs - we'll be planning white chicken chili, burritos, pasta dishes, kung pau (rice dish)
