What's the best/most interesting/(easiest?) dinner you make?

I write a blog on wine and I'm looking for new ideas for food and wine pairings. Do you have a dinner you make for your family that is your most interesting-unusual-easiest-cheapest-most complicated-birthday favorite -- or whatever? I'd like to hear about it. Thanks!

Hi Nancy!
I'm comfortable making easy dinners. (My husband is the true chef in the family.)

If you like chicken, try this:
1 lb. chicken (I prefer thighs)
1 can stewed tomatoes
1/2 tsp. garlic powder
1/2 tsp. chili powder
1/4 crushed red pepper
1/8 tsp. ground cinnamon
1/8 tsp. cumin
*Brown chicken 5 minutes each side
*Add remaining ingredients to pan. Reduce heat to low and cook for 25 minutes.
*You might want to serve with noodles of your choice, or rice.
The smell of your kitchen is just wonderful while you're cooking this. It's oh-so-easy and so delicious! It's amazing how the addition of the cinnamon really throws people and they love the surprise. ~ It's no surprise to me because I love cinnamon!

BROCCOLI CASSEROLE
3/4 lb. Velveeta™ cheese, cubed
2 small boxes frozen chopped broccoli
1 cup cooked minute or brown rice
1 onion, chopped
1 stick butter
1 can cream of chicken soup
1/2 cup milk
Saute onions in butter. Cook broccoli as package directs,
drain. Cook rice, combine all ingredients; pour into 9x13 in.
dish. Bake at 350 for 45 minutes or until brown. Yum! Yum!
Thank you! Broccoli, cheese, and rice is a win/win/win combination.
My family loves Peasant Pasta -

4 links of hot sausage (casings removed) can be substituted with veggie sausages
4 links of mild sausage (casings removed)
small bag frozen peas
2 cloves of garlic
1 small onion chopped
1 large can of crushed tomatoes
1/2 cup of veggie or chicken broth
salt and pepper to taste
1/2 tsp dried oregano
1/2 tsp of dried basil
1/2 cup of whipping cream
1 pound of shaped pasta
parmesan cheese to flavor


Cook pasta according to package.

Cook sausage in large sautee pan, breaking as it cooks
When fully cooked add garlic and onions and cook well
Add the broth and let it come to a boil
Then add the crushed tomatoes and seasonings
Let it cook for about 5 minutes and add the whipping cream
Let it come to a boli and lower heat and let simmer for 10 minutes
Add the frozen peas and let cook for about 3 minutes, until peas are cooked

After 10 minutes, drain the cooked pasta and add to the sauce, add cheese

We usually serve with garlic bread and salad, mmmm, yummy:)

I'm all about cheap and easy!
First thing, has anyone tried the California Pizza Kitchen frozen pizzas? They are the best gourmet fake out around. I love the thin crust BBQ Chicken pizza...fast, easy and love the faux-gourmet.
Second, if I can put it in the crock pot and come home from work ...house smelling great....dinner ready...whos the star? The crock pot is so easy....pick a meat, pick spome veggies, add some wine and/stock and boom...dinner.
Thanks, Kelley ... another nice thing about the crock pot is that there's no worry about whether the meat is done, which is my big bug-a-boo.
