Since I was diagnosed with rheumatoid arthritis in May of 2016, countless people have suggested that I switch to an anti-inflammatory diet. I have deeply considered it but at the same time, I love my carbs. I have tried to watch my carb intake but even that is hard to do. Gluten and sugar are in most of the foods that we eat. Does anyone have any suggestions on working towards a gluten-free and reduced sugar diet?

I love that this recipe is simple and you can easily make this with any type of squash that is currently in season. Just pick up a butternut squash, maple syrup, and cinnamon to your shopping list. Oven Roasted Asparagus with Garlic, Parmesan, & Lemon

My grandmother had asparagus growing in her garden and I always loved it when she would make us fresh vegetables. Homegrown veggies always seemed to taste better. It makes me wish that she was still around so that she could fix this recipe for Easter dinner. This recipe is quick and easy too. Oven Roasted Spring Vegetables

I am obsessed with the way these oven-roasted vegetables look and I bet they are so delicious too. I love the mix of vegetables served with red potatoes that is featured in this recipe. If you can't eat regular potatoes, you can even swap them out for sweet potatoes or another spring vegetable. This recipe only takes roughly 30 minutes to make and would be perfect to serve with pork chops or ham during Easter dinner. You can find the recipe here.

Easy Garlic and Herb Roasted Carrots

Carrots are one of my favorite vegetables to snack on when I get hungry in the afternoons. I have some baby carrots in my refrigerator so I should give this recipe a try. Thankfully, my kids aren't super picky eaters but I still like offering them a variety of healthy vegetables at dinner time. Carrots are also the Easter Bunny's favorite too. When I am busy preparing a huge meal, I tend to stick with side recipes that only take 5 or 10 minutes to prep so that I can focus on the rest of the bill.
