. I've been given the opportunity to blog about my experiences with recipes on The Six O'Clock Scramble
and am here to report on my second recipe.
Monday nights are some of the craziest nights at the Segedie house. I take a Tae Kwon Do class at 6pm in the next city over and with traffic, it takes me about 20 minutes to get there. I've got to have dinner ready and be out the door by 5:30pm for everything to go smoothly. My son naps from 2-4pm or so and in that time I have to work out, take care of by my business and shower. Then my son wakes up and I tend to him, clean up the mess and cook dinner. So I usually opt for something easy and was a little worried at first because I'm not very good at cooking fish. Actually, fish kind of scares me and at first I was hating myself for choosing to try fish on one of the craziest night, but things worked out pretty good.
This recipe was called Oven-Fried Lemon Garlic Cod with Asparagus. It's one of the low-fat recipes, but the taste is definitely not low-fat. It took about five minutes to prepare and then 15 minutes to cook. It was really easy and has a fun component in it for kids to help. They can help crush up the crackers, paint the sauce on the fish, and then sprinkle the cracker crumbs on the fish. Well, maybe if you have more time than I do. The asparagus recipe was awesome! I've never cooked asparagus like that before and it turned out very juicy. When I got back from my class, my husband told me he actually ate it! He's never eaten asparagus before, so I was shocked. ! You got my husband to eat his vegetables! My son always eats his veges no problem because he loves Vegetales, but my husband, another story.
