So far (knock on wood), my 9 month old will eat anything I give her. So, I try and give her healthy choices as much as possible. If everything tasted good, wouldn't you eat the healthiest stuff all the time too!? I read an article on superfoods for babies and decided to try and pack as many of those as possible into one french fry shaped "finger" that she could easily feed herself. I found a winning recipe! I made them over the weekend and they will probably last all week - plus they are easy to pack for daycare.
You start with the five superfoods:
Mix all of your ingredients and form into french fry shaped "logs" or "fingers".
Then you just cook them over medium heat on all sides so they harden up on the outside, making them easy for baby to grab. Mine took about 10 minutes to get all of the sides browned. I made two batches so the total cook time was about 20 minutes.
Voila! My black bean superfood "fingers" are a hit!
As you can see, she seems to be enjoying her incredibly healthy meal...fingers crossed this lasts for awhile!
If you're wondering why my sweet potatoes are purple...it was the only thing the grocery store had in organic! And since she doesn't notice, I went for it. I'm wondering what daycare thinks is in these little treats...
