Due to Victor being a chef, having Saturdays off is a joke. Gabriella’s actual birthday is on a Saturday and Victor didn’t have to be in at work until the afternoon, so we were able to celebrate a little bit. I made Mickey Waffles! The Mickey waffles were great, especially since her birthday party was a Magic Kingdom themed party (working on that post).
Last year for Christmas I bought this Mickey Waffle Iron from Amazon.com (affiliate link), to remind us of memories at Disney. I am so happy I picked it up!
This is the recipe I found
Basic Buttermilk Waffle Recipe
- 2 cups All-Purpose Flour
- 2 cups Buttermilk (I didn’t have any buttermilk, so I measured out 2 cups of milk and squeeze the juice of 2 lemons into it and let it set for 5 minutes)
- 2 Tablespoons Sugar
- 1 teaspoon Baking Soda
- 1/2 teaspoon Baking Powder
- 1/4 cup Butter, melted
- 2 Eggs
- Gather all ingredients and equipment
- In a large bowl, mix the dry ingredients together, then add the milk and eggs. Mix until well combined.
- Whisk in the butter until smooth
- Place batter into preheated waffle iron.
I topped the waffles with a dusting of powdered sugar, sprinkles, chocolate chips, and served it with real maple syrup.
