I love crock pot recipes ;-)
I have been looking for recipes to make delicious meals that are low carb. Most of them I've found are backed up with potatoes and other high carb food that are just not in my diet. However, rather than passing them by I decided to modify the recipe so that I could enjoy a meal with my family.
This recipe was quick and easy to prepare and in 6 hours I will have a grand meal to present (Plus the bonus of how the house will smell) I will also add a side of fresh green beans and for the boys a side of mashed potatoes. This meal, minus the potatoes is under 20g of carbs. This meal is also freezer friendly if you like to prepare meals and save for another day. ENJOY!!
POT ROAST with VEGGIES -
2-3lb beef roast- season and sear meat a couple minutes on each side and place in crock pot.
1 cup sliced carrot
1 variety pack of Onion, bell peppers and mushrooms
1 1/2 cup of beef broth and 1 pack of dry vegetable soup mix
Arrange veggies around the roast in the crock pot, mix the broth and dry soup mix together and pour on top of the roast and veggies.
Set your crock pot on Low 6-8hours or High 3-4 hours.
That is it, let the magic begin..
