National S'mores Day is celebrated on August 10th.  Our family just returned from camping and s'mores are definitely one of our favorite camping treats.  Did you know the s'more recipe was first published in the Girl Scouts Handbook in 1927 the recipe was called "Some More" the recipe was printed again in 1956 with the new name "S'mores".

You don't have to wait until you go camping to enjoy s'mores.  You can make s'mores, in your oven or your backyard firepit.  

In honor of National S'mores Day, I will be sharing 3 S'more recipes this week.  I'm going to start with a recipe smash-up of two of my favorite things brownies and s'mores.  YUM!!!

With the kids getting ready to go back to school, this is a fun family recipe to bake together, as a goodbye to summer party.

Ingredients
Brownie Mix (Egg, Oil, Water)
Graham Crackers
Hershey's Chocolate or Chocolate Chips
Marshmallows  

Directions
Preheat your oven to 350 degrees.
Line your baking dish with parchment paper, spray with non-stick spray.
Place Graham Crackers on the bottom of the baking dish.
Prepare brownie batter according to package directions.
Add in chopped Hershey's Chocolate or Chocolate Chips.
Pour brownie batter on top of graham crackers in the baking dish and bake for 30-40 minutes.
Place marshmallows on top of cooked brownies and bake for another 10 minutes.
Place under the broiler to brown the marshmallows, watch closely so they don't burn.
Let cool and serve.

We, of course, could not wait until they cooled, so they were a little messy.  If you let cool they will still taste good and will keep more of the brownie shape.  If they are too hot, they are really gooey. They even tasted great the next day, I was impressed by how the marshmallows hold up.  These were definitely a hit with my family.  

Next time we make them we may try making the graham cracker crust, actually smashing the graham crackers and mixing with butter, our consensus was by just laying the graham cracker on the bottom, it seemed to disappear in parts.  We also used a really great brownie batter the Ghiradelli brand from Costco, which is really rich and dense, which maybe that was part of the reason our graham cracker seemed to not hold up as much.
