There is something about warm muffins on a cold day that warm my soul (o: Ingredients:

3 cups raisin bran cereal
1 1/2 cups milk
1/2 cup raisins
1 cup whole wheat flour
1 cup all-purpose flour
3 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 vegetable oil (I used 1/2 cup virgin coconut oil)
2 large eggs, lightly beaten
3/4 cup dark brown sugar, packed

Preheat oven to 400. Line 12 cups of a standard muffin tin with paper cupcake/muffin liners.

In a bowl, combine cereal with milk; let cereal & milk stand until softened, about 10 minutes.

In another bowl, stir together both flours, baking powder, cinnamon & raisins.

Once cereal has softened, stir in oil, eggs & brown sugar. If you are using coconut oil, I recommend heating the coconut oil on the stove until melted. Fold this into flour mixture.

Divide batter evenly among lined cups.

Bake at 400 until golden brown & a knife inserted comes out clean, about 20 - 25 minutes.

Remove muffins from oven & cool for at least 5 minutes. Serve warm with a pat of butter, yummy! Makes 12 (o:
